In a mixing bowl, place diced tomato, red onion, jalapeño, red pepper, garlic and avocado.
In a separate small mixing bowl, whisk together lime juice, olive oil, salt and pepper.
Pour mixture over avocado-tomato relish mixture, then gently toss mixture to evenly coat.
Place in container with lid. Refrigerate until needed for up to 24 hours.
Combine olive oil and Cajun seasoning in a mixing bowl and set aside.
Add the shrimp to the marinade and allow to marinate overnight.
Remove the shrimp from the marinade.
Grill shrimp until shrimp is cooked through.
Remove from grill and toss in agave.

Place sauce into a clean container. Use immediately or store finished Avocado Cocktail Sauce in refrigerator, with plastic wrap pressed to the surface, to avoid browning for up to 2 days.
Place serving glass rim-side-down into lime juice, then dip lime-rimmed glass into chili-lime seasoning blend.
Once glass is rimmed, pour ½ cup Avocado Cocktail Sauce into glass.
Portion ½ cup Avocado and Tomato Relish into the center of the glass on top of Avocado Cocktail Sauce.
Place 5 Grilled Spicy Agave Shrimp tail-side-down around the entire rim of the glass.
Garnish each Avo Shrimp Cocktail with a lime wedge and serve.
