Ingredients
- Cannoli Shell:
- 1 c. all-purpose flour
- 5 T. sugar
- 1/4 t. ground cinnamon
- 1/4 t. salt
- 1 t. butter, cold
- 1-1/4 c. water
- 1 T. cider vinegar
- 1 ea. large egg yolk
- Oil for frying as needed
- Avocado Lime Curd:
- 1-1/2 ea. Avocados From Mexico, halved, pitted, & peeled
- 1 T. heavy cream
- 1-1/2 c. sugar
- 1 oz. butter
- 1/3 c. fresh lime juice
- 1 T. lime zest
- 1 ea. egg, beaten
- Chocolate Avocado Guacamole:
- 1-1/2 ea. Avocados From Mexico, halved, pitted, & peeled
- 1-1/2 ea. bananas, ripened
- 1-1/4 c. cocoa powder
- 1-1/4 c. creamy peanut butter
- 1 oz. agave
- Exotic Fruit Salad:
- 2 oz. Avocados From Mexico, small dice
- 1 ea. kiwi, finely diced
- 6 ea. kumquats, sliced
- 6 ea. strawberries, finely diced
- 2 oz. pineapple, finely diced
- 2 oz. pomegranate seeds
- 1 oz. mint leaves, finely chopped
Instructions
- CANNOLI SHELLS: In a large bowl, combine the flour, sugar, cinnamon, and salt.
- Using your finger, mash the cold butter into the flour mixture until the mixture becomes a sand-like texture.
- Add the water, vinegar, and egg yolk. Mix until dough is smooth, be careful not to overwork. Form dough into a disc, wrap with plastic, and refrigerate for 1 hour.
- Roll out dough to 1/8-inch thickness. Cut 12 rounds using a cutter. Deep fry in a taco basket until golden brown.
- AVOCADO LIME CURD: In a small bowl, combine the sugar, butter, lime juice, and lime zest; place over a double boiler. Once melted, removed from double boiler and whisk in eggs; return to double boiler. Heat until mixture is thickened.
- In a medium bowl, whip together the avocados and heavy cream until smooth.
- Fold whipped avocado into the lime mixture until well combined.
- Cover and chill for 1 hour or until set.
- AVOCADO CHOCOLATE GUACAMOLE: In a large bowl, mash together the avocados, bananas, cocoa powder, peanut butter, and agave until chunky-smooth.
- Cover and chill for 1 hour.
- EXOTIC FRUIT SALAD: In a large bowl, add all fruit and mix until well combined.
- CANNOLI DESSERT TACO: Fill the cannoli taco by layering the chocolate avocado guacamole and avocado lime curd. Top with exotic fruit salad.
