When it comes to traditional tacos, the Avo Navajo Tacos hit the spot! Crunchy taco shells filled with a beef and bean mixture, shredded lettuce, tomatoes, cheddar cheese, creamy avocado and sour cream, scream of Navajo flavor that you can't live without!
Ingredients
- Avo Navajo Tacos
- 12 EA Crunchy taco shells
- 2 EA Avocados From Mexico, diced
- 3/4 c Romaine lettuce, shredded
- 3/4 c Cherry tomatoes, halved
- 1/3 c Cheddar cheese, grated
- 1/4 c Sour cream
- Ground Beef
- 1 lb Ground beef, 93% lean
- 1 EA Pinto beans, canned, drained, rinsed
- 1 EA Taco seasoning, packet
- 1 T Avocado oil
Instructions
- Ground Beef
- In a large skillet, warm avocado oil and add ground beef.
- Cook thoroughly, approx. 10 minutes, until there is no pink.
- Stir in taco seasoning and pinto beans. Cook for an additional 2-3 minutes.
- Avo Navajo Tacos
- Assemble tacos by evenly distributing ground beef mixture into taco shells.
- Evenly distribute lettuce, tomatoes, cheese, and avocado respectively. Optionally, top with sour cream.
