If you are looking for a taste of the Big Easy, these tacos are for you! Made with an avocado crema cabbage and topped with blackened shrimp, a tangy salsa featuring corn, red onion, tomato and avocado and garnished with cilantro, the flavor and spice of this recipe will leave you wanting more!
Ingredients
- 8 EA Tortillas, low-carb
- To garnish Cilantro, chopped
- Shrimp
- 1 lb Shrimp, peeled, deveined, tails removed
- 2 Tbsp Avocado oil
- 1 EA Garlic clove, crushed
- 2 tsp Paprika
- 1/2 tsp Onion powder
- 1/2 tsp Kosher salt
- 1/2 tsp Thyme, dried, ground
- 1/4 tsp Black pepper, ground
- 1/4 tsp Cayenne pepper
- 1/4 tsp Oregano, dried
- Avocado Crema Cabbage
- 4 c Purple cabbage, shredded
- 1 EA Avocados From Mexico, mashed
- 1/2 c Sour cream
- 2 Tbsp Mayonnaise
- 1 Tbsp Lime juice
- 1/2 tsp Kosher salt
- 1/4 tsp Garlic powder
- 1/4 tsp Cumin, ground
- Salsa
- 1 EA Avocados From Mexico, cubed
- 1/2 c Corn, canned, drained
- 1/2 c Tomato, diced
- 1/4 c Red onion, diced
- 1 Tbsp Lime juice
Instructions
- Salsa
- In a medium bowl, add ingredients and gently toss until well combined.
- Avocado Crema Cabbage
- In a medium bowl, add avocados and mash.
- Once avocados are mashed, add all ingredients except cabbage. Stir until well combined and a smooth mixture has formed.
- Add cabbage and stir until well combined.
- Shrimp
- In a medium bowl, add shrimp and all ingredients except avocado oil. Toss shrimp until well coated with seasoning mixture.
- Heat a medium-large skillet on medium-high heat for approx. 2 minutes, until hot. Add avocado oil and coat pan.
- Add shrimp to skillet and cook approx. 2-3 minutes per side, until cooked through.

- Assemble tacos by evenly distributing the cabbage onto tortillas.
- Then, evenly distribute shrimp on top of cabbage.
- Top each taco with salsa and garnish with cilantro.
