Summer Avocado Watermelon Salad

  • Salad
  • 16 c. Arugula
  • 2 ea. Avocados From Mexico, cubed
  • 2 c. Watermelon, chunks
  • 1 c. Feta cheese, crumbled
  • 1/2 c. Pumpkin seeds
  • To garnish Mint, fresh
  • Tequila Lime Dressing
  • 1/4 ea. Avocados From Mexico
  • 2 T. Cilantro
  • 2 T. Lime juice
  • 1/2 T. Honey
  • 1/2 T. Olive oil
  • 1/2 T. Tequila
  • 1/2 T. White wine vinegar


  1. In a blender, combine all dressing ingredients and blend until smooth.
  2. In a bowl, add arugula and dressing. Toss until well combined.
  3. Add avocado, watermelon, feta cheese and pumpkin seeds. Gently toss until well combined. Garnish with fresh mint.
