Ingredients
- 4 c. Bulger, cooked
- 2 c. Chickpeas, cooked
- 2 c. Cucumber, diced
- 2 c. Parsley, chopped
- 2 c. Tomatoes, diced
- 1 c. Feta, crumbled
- 1/4 c. Olives, sliced
- 1/4 c. Red onion, diced
- Avocado Hummus
- 1/2 c. Chickpeas, cooked
- 1 ea. Avocados From Mexico
- 3 T. Avocado oil
- 2 T. Lemon juice
- 2 ea. Garlic cloves, minced
- Salt and pepper, to taste
- Lemon Vinaigrette
- 1/4 c. Lemon juice
- 2 T. Avocado oil
- 1 t. Dijon mustard
- Salt and pepper, to taste
Instructions
- For the Avocado Hummus: In a blender, add chickpeas, avocado, avocado oil, lemon juice and garlic cloves. Blend until thoroughly combined and salt and pepper to taste.
- In a medium bowl, add lemon juice, avocado oil, dijon mustard and salt and pepper to taste. Stir until well combined.
- In large bowls, evenly distribute bulgur wheat, chickpeas, cucumber, parsley, tomato, feta, olives, red onion, hummus and lemon vinaigrette
