Ingredients
- 3/4 pound ground pork meat
- 3 tablespoons of olive oil
- 1 teaspoon of cumin
- 1 teaspoon oregano
- A pinch of chile chipotle powder
- 1 teaspoon garlic powder
- 2 finely chopped jalapeno chiles
- 3 tablespoons finely chopped black olives
- 2 tablespoons olives stuffed with pepper finely chopped
- 3 tablespoons chopped cilantro
- 6 quesadilla wheat tortillas
- 1 cup Mexican cheese blend
- Salt and pepper to taste
Instructions
- In a hot skillet add the 2 tablespoons of olive oil and add the cumin, oregano, chipotle, garlic and a little salt and pepper. Cook for 30 seconds and add the ground pork. Allow to cook for 10 minutes. Add the jalapeño pepper and olives. Cook for 5 minutes, remove from the heat and reserve.
