Ingredients:
  • 1 Avocado From Mexico, halved, pitted, and peeled 
  • 1 tbsp. onion, finely chopped 
  • 1 tbsp. cilantro, finely chopped 
  • 1 tsp. jalapeño, minced 
  • 1 tsp. lime juice 
  • 1/4 tsp. salt 
  • 1 c. refried beans 
  • 2 tsp. black olives, finely chopped 
  • 2 tsp. green olives, finely chopped 
  • 1/3 c. non-fat plain Greek yogurt 
  • 1/4 c. tomato salsa 
  • 1/3 c. cheddar cheese, shredded 
Directions:
  1. In a medium bowl, mash the avocado until it reaches a chunky-smooth consistency. 
  2. Add the onions, cilantro, jalapeño, lime juice, and salt, and mix gently (you don’t want the avocado mixture to be too mushy) until well combined. 
  3. To assemble, layer the ingredients in a 10-inch square serving dish in the following order: refried beans, green and black olives, Greek yogurt, salsa, cheese, and, last but not least, guacamole. 

Avo Hummus

For those always on the lookout for really excellent vegan options, this recipe earns its place in any plant-based diet as a consistent crowdpleaser. Brimming with flavors of lime, garlic, and smoky adobo, this pureed spread of avocado, garbanzo beans, and tahini is delicious and ohsosmooth. 

Ingredients:
  • 1 15.5-oz. can garbanzo beans, rinsed and drained  
  • 1 Avocado from Mexico, halved, pitted, peeled, and diced 
  • 1 garlic clove, peeled  
  • 1/2 c. freshly squeezed lime juice 
  • 3 tbsp. olive oil 
  • 2 tbsp. sauce from chipotles in adobo, or more to taste 
  • 2 tbsp. tahini 
  • 1 tsp. kosher or sea salt 
  • Freshly ground black pepper to taste 
Directions:
  1. In the bowl of a food processor or blender, puree the garbanzo beans along with the avocado, garlic, lime juice, olive oil, chipotle in adobo sauce, tahini, salt, and freshly ground black pepper until smooth, or to the desired consistency. 
  2. Spoon into a bowl and serve with vegetables, pita bread, or chips of your choice.

Avocado and Tropical Fruit Salsa

In this recipe, mango, pineapple, and lime dance a sweet and zesty tango through fresh avocado and cilantro. Jalapeño adds a flare of spice, while toasted pumpkin seeds add a welcome crunch. Ingredients:
  • 1 Avocado From Mexico, halved, pitted, peeled, and diced 
  • 1 large mango, peeled, pitted, and diced 
  • 1 20-oz. can crushed pineapple, drained and juice reserved 
  • 1/2 c. green onions, sliced 
  • 1/4 c. pumpkin or sunflower seeds, toasted 
  • 3 tbsp. fresh lime juice 
  • 3 tbsp. cilantro, chopped 
  • 2 tbsp. pineapple juice (reserved from can) 
  • 2 tbsp. jalapeño, minced 
Directions:
  1. In a large bowl, combine the avocado, mango, pineapple, green onions, pumpkin seeds, lime juice, cilantro, pineapple juice, and jalapeño. 
  2. Serve with a prepared protein as a meal or with tortilla chips.
