The 5 Stages Of Ripeness
How to sell Avocados From Mexico while the getting’s good.
Very hard fruit, usually green or sometimes black. Ripeness in about 7 days at 25 lbs. pressure.
Pre-conditioned fruit ripens in 3–5 days at room temperature (15–25 lbs. pressure).
Breaking fruit has slight give and ripens in –3 days at room temp (10–15 lbs. pressure)
Firm, slightly ripe fruit yields gently, ideal for slicing. Ripens fully in 1 day at room temp (5–10 lbs. pressure)
Ripe fruit yields easily—use same day or refrigerate for 3–5 days (5lbs. or less)
TIP:
Color is not always the best indicator of ripeness. Always wash avocados before cutting into them.
