  • 2 libras de lomo de Puerco en trozos
  • 4 chiles nuevo méxico remojados por 30 minutos
  • 1 cebolla grande picada
  • 4 dientes de ajo picado
  • 2 zanahorias picadas en rodajas
  • 2 tallos de apio finamente picado
  • 1 lata de 15 oz de tomate picado
  • 7 tazas de caldo de pollo bajo en sodio
  • 2 latas de mote blanco o maíz pozolero
  • 1 cucharada de orégano mexicano seco
  • 3 cucharadas de aceite de oliva
  • sal y pimienta al gusto
  • Para acompañar
  • Trozos de Aguacates de México
  • Cilantro
  • Tortilla chips
  • Limón

Instructions

  1. En una licuadora procesa los chiles con un poco de su agua.
  2. En una olla grande agrega el aceite de oliva, dora la carne de cerdo y reserva.
  3. Agrega la cebolla el apio y la zanahoria, deja cocinar por unos minutos y agrega el ajo.
  4. Regresa el cerdo a la olla y agrega el puré de chile y el tomate. Agrega el caldo, el orégano, el maíz y deja cocinar por 45 minutos.
  5. Sirve acompañado de aguacate, cilantro, limón y tortilla chips
