Chicken flautas take on a whole new attitude when they are drizzled with avocado salsa. Mixed with sour cream and cilantro, this avocado mixture is a win! Layer your flautas and pair with a salad and you are ready for a fresh, delicious lunch or dinner. The salsa can also be used to drizzle on veggies or salads as well. Ingredients
- Flautas:
- 3 ea. chicken breasts
- 1 ea. bay leaf
- 1/2 ea. onion
- 1 T. chicken broth
- Salt and pepper to taste
- 16 ea. corn tortillas
- Oil for frying as needed
- Avocado Salsa:
- 2 ea. Avocados From Mexico, halved, pitted, and peeled
- 1/2 c. sour cream
- 1/2 ea. lemon, juiced
- 2 T. cilantro
- 3 T. olive oil
- Salt and pepper to taste
Instructions
- In a pot with water, cook the chicken with the bay leaf, onion, and chicken broth. Allow to cook for 15 to 20 minutes. When the chicken is done, shred with two forks and set aside.
- In a blender, add the salsa ingredients(avocado, lemon juice, sour cream, olive oil, cilantro, salt, and pepper. Blend until smooth. Add more oil if necessary.
- In each tortilla, place a little of the chicken, roll, and secure with a toothpick. In a pan with hot oil, fry the flautas until they are golden brown.
- Serve the flautas with avocado salsa.
