Ingredients
- Yellow Bell Pepper Pico de Gallo:
- 1-1/2 ea. medium yellow bell pepper, small dice
- 1-1/2 ea. medium onion, small dice
- 1 ea. medium tomato, small dice
- 1 T. cilantro, finely chopped
- 1 ea. lime, juiced
- Salt to taste
- Pepper to taste
- Hummus Guacamole:
- 2 ea. Avocados From Mexico, halved, pitted, & peeled
- 2 T. prepared hummus
- 1-1/2 ea. small red onion, small dice
- 1-1/2 ea. small tomato, small dice
- 1-1/2 T. cilantro, finely chopped
- Salt to taste
- Pepper to taste
Instructions
- Yellow Bell Pepper Pico de Gallo: In a medium bowl, add the bell peppers, onions, tomatoes, cilantro, and lime juice; mix until well combined. Season with salt and pepper.
- Hummus Guacamole: In a medium bowl, mash the avocados to desired consistency. Fold in hummus, onions, tomatoes, and cilantro. Season with salt and pepper. Top with Yellow Bell Pepper Pico de Gallo.
