Ingredients
- 3 1/2 cups Avocados From Mexico, peeled and pitted, small diced
- 2 cups white balsamic vinegar
- 5 tablespoons dill, fresh
- 1 cup granulated sugar
- 1/4 cup kosher salt
- 2 cups ice
- 2 1/2 cups English cucumber, small diced
- 2 cups white balsamic vinegar
Instructions
- Heat balsamic, dill, sugar, and salt together until sugar and salt are totally dissolved. Take the pickling liquid off the heat and add ice to mixture. Let it melt completely.
- Pour cooled pickling liquid over small diced avocado and English cucumber.
- Let the mixture sit for 1-2 hours before using.
