Avocado Chimichurri Steak Roll

Ingredients

  • Avo-Chimi Steak Roll
  • 6 ea. Texas Toast, Buttered, Toasted
  • 6 leaves Green Leaf Lettuce
  • 1.5 c. Red Onions, 1/4" Sliced, Grilled
  • 1.5 lb Skirt Steak, Grilled, 1/2" Sliced
  • 1.5 c. Avocado Chimichurri (See Below)
  • Avocado Chimichurri
  • 1 c. Avocados From Mexico, Stage 2, 1/4" Dice
  • 6 T. Red Wine Vinegar
  • 6 T. Olive Oil
  • 2 t. Garlic Fresh, Minced
  • 1 T. Shallots, Minced
  • 1 t. Jalapeños, Seeded, Minced
  • 0.25 c. Cilantro, Roughly Chopped
  • 0.25 c. Curley Parsley, Roughly Chopped
  • 0.5 t. Kosher Salt
  • 0.5 t. Black Pepper, GroundBui

Instructions

    Avo-Chili Steak Roll Directions:
  1. Build each sandwich in the following order and amounts.
    • 1 Each Texas Toast, Buttered, Toasted
    • 1 Leaf Green Leaf Lettuce
    • 1/4 Cup Red Onions, 1/4" Sliced, Grilled
    • 4 oz Skirt Steak, Grilled
    • 1/4 Cup Avocado Chimichurri Sauce
    Avocado Chimichurri Directions:
  1. In a medium bowl, whisk all the ingredients together, except the avocados, until they are all evenly combined.
  2. Gently fold in the avocados until all pieces are evenly coated.
  3. Hold in an airtight container in the refrigerator until ready to use.
