- Avo-Chimi Steak Roll
- 6 ea. Texas Toast, Buttered, Toasted
- 6 leaves Green Leaf Lettuce
- 1.5 c. Red Onions, 1/4" Sliced, Grilled
- 1.5 lb Skirt Steak, Grilled, 1/2" Sliced
- 1.5 c. Avocado Chimichurri (See Below)
- Avocado Chimichurri
- 1 c. Avocados From Mexico, Stage 2, 1/4" Dice
- 6 T. Red Wine Vinegar
- 6 T. Olive Oil
- 2 t. Garlic Fresh, Minced
- 1 T. Shallots, Minced
- 1 t. Jalapeños, Seeded, Minced
- 0.25 c. Cilantro, Roughly Chopped
- 0.25 c. Curley Parsley, Roughly Chopped
- 0.5 t. Kosher Salt
- 0.5 t. Black Pepper, GroundBui
Instructions
- Avo-Chili Steak Roll Directions:
- Build each sandwich in the following order and amounts.
- 1 Each Texas Toast, Buttered, Toasted
- 1 Leaf Green Leaf Lettuce
- 1/4 Cup Red Onions, 1/4" Sliced, Grilled
- 4 oz Skirt Steak, Grilled
- 1/4 Cup Avocado Chimichurri Sauce
- Avocado Chimichurri Directions:
- In a medium bowl, whisk all the ingredients together, except the avocados, until they are all evenly combined.
- Gently fold in the avocados until all pieces are evenly coated.
- Hold in an airtight container in the refrigerator until ready to use.
