Avocado Flan

Avocado Flan

INGREDIENTS

  • 2 ea. Avocados From Mexico
  • 2 c. plain yogurt
  • 1 c. unsweetened pineapple juice
  • 1 ea. packet unflavored gelatin
  • 4 T. sugar

INSTRUCTIONS

  1. Heat pineapple juice over medium heat and when it begins to boil, remove from heat and add the gelatin, stirring constantly until completely dissolved.
  2. Combine yogurt, avocado pulp and sugar in a food processor and blend until creamy and smooth. Add the gelatin slowly while food processor is still running to combine.
  3. Moisten base of the pan you're going to use with water and pour in the mixture. Refrigerate for 2 to 3 hours or until set.
  4. Carefully unmold and decorate to taste.
