Ingredients
- 2 ea. Avocados From Mexico
- 2 c. plain yogurt
- 1 c. unsweetened pineapple juice
- 1 ea. packet unflavored gelatin
- 4 T. sugar
Instructions
- Heat pineapple juice over medium heat and when it begins to boil, remove from heat and add the gelatin, stirring constantly until completely dissolved.
- Combine yogurt, avocado pulp and sugar in a food processor and blend until creamy and smooth. Add the gelatin slowly while food processor is still running to combine.
- Moisten base of the pan you're going to use with water and pour in the mixture. Refrigerate for 2 to 3 hours or until set.
- Carefully unmold and decorate to taste.
