Ingredients
- 6 ea Eggs, fresh, white, large
- 1 ea Avocados from Mexico, seeded, peeled
- 1 T. Lime juice, fresh
- 2 T. Red onion, minced
- 1 T. Jalapeño, fresh, seeded, minced
- 2 T. Cilantro, fresh, fine chopped
- 1/4 t. Kosher salt
- 1 ea Red food coloring, tube
- 12 ea Candy eyes
Instructions
- Place eggs in a small pot.
- Cover eggs with water, cover pot and bring to boil over high heat.
- Let eggs boil for 5 minutes, then turn off heat.
- Remove eggs and allow eggs to cool.
- Once cooled, peel eggs and slice in half.
- Scoop out egg yolks from cooked eggs and place into a mixing bowl.
- Add egg yolks, avocado, lime juice, onion, jalapeño, cilantro, and salt.
- Mash all ingredients together until smooth.
- Place avocado mix into a piping bag and set aside.
- Dip a toothpick into the red food color and paint veins on each egg white.
- Pipe avocado mix into the hollowed-out egg halves.
- Chill until ready and top each with a candy eye.
- Serve as needed.
