Ingredients
- 2 ea. Avocados From Mexico, halved, pitte, & peeled
- 1 ea. lime, juiced
- 2 t. green curry paste
- 2 T. pickled onions, finely chopped
- 2 T. cilantro, finely chopped
- 1 T. dried currants
- 1 T. unsweetened shredded coconut
- Salt to taste
Instructions
- In a medium bowl, mash the avocados with lime juice and curry paste to desired consistency.
- Fold in onions and cilantro until well combined; season with salt. Top with dried currants and shredded coconut.
