Green Curry Guac


  • 2 ea. Avocados From Mexico, halved, pitte, & peeled
  • 1 ea. lime, juiced
  • 2 t. green curry paste
  • 2 T. pickled onions, finely chopped
  • 2 T. cilantro, finely chopped
  • 1 T. dried currants
  • 1 T. unsweetened shredded coconut
  • Salt to taste


  1. In a medium bowl, mash the avocados with lime juice and curry paste to desired consistency.
  2. Fold in onions and cilantro until well combined; season with salt. Top with dried currants and shredded coconut.
