Ingredients
- Guacamole:
- 3 ea. Avocados From Mexico, halved, pitted, & peeled
- 4 ea. Serrano chiles, seeded & finely diced
- 1/2 ea. medium red onion, finely diced
- 1/4 c. cilantro, finely chopped
- 2 T. lime juice
- Salt to taste
- Pepper to taste
- Tomato and Applewood Bacon Topping:
- 2 ea. roma tomatoes, seeded & diced small
- 3 ea. Serrano chiles, seeded & finely diced
- 1 T. cilantro, finely chopped
- 3 T. olive oil
- Salt to taste
- Pepper to taste
- 4 ea. strips of Applewood smoked bacon, cooked & crumbled
- 1/4 c. cottage cheese, crumbled
Instructions
- Guacamole: In a large bowl, mash the avocados until chunky-smooth.
- Fold in Serrano chiles, red onions, cilantro, and lime juice. Season with salt and pepper.
- Tomato and Applewood Bacon Topping: In a small bowl, add the tomatoes, Serrano chiles, cilantro, and olive oil; mix until well combined. Season with salt and pepper.
- Fold in bacon and cheese.
- Top over guacamole.
