- 1 Avocado From Mexico Halved pitted peeled and diced
- 1 large mango peeled pitted and diced
- 1 can ( 20 oz)Pineapple crushed drained and juice reserved,
- 2 tbsp pineapple juice from reserved
- 1/2 cup green onions scallions
- 1/4 cup pumpkin or sunflower seeds toasted
- 3 tbsp cilantro chopped
- 1-2 tsp jalapeño minced
- In a large bowl, combine the avocado, mango, pineapple, pineapple juice, green onions, pumpkin seeds, cilantro, jalapeño and lime juice.
- Serve with grilled chicken, fish or shrimp.
