Chorizo and Guac Taco

Warm corn tortillas filled with chorizo and chili-lime seasoned potatoes, topped with a large dollop of traditional guacamole.


  • 1 ea. Corn tortilla
  • 1.5 oz. Chorizo, prepared
  • 0.25 c. Chili lime potatoes, fried
  • 2 Tbsp. Traditional Guacamole
  • 1 tsp. White onion, minced
  • 0.5 tsp. Cilantro, picked and minced
  • Traditional Guacamole:
  • 0.5 c. Avocados From Mexico, stage 4, halved, pitted, mashed
  • 0.5 Tbsp. Lime juice, fresh
  • 0.5 tsp. Jalapeño, deseeded and minced


For the taco:
  1. Warm tortillas.
  2. Top with heated chorizo, potatoes, guacamole, minced onion and cilantro
For the guacamole:
  1. In a large bowl, smash avocados with a fork to form a chunky mash.
