Avocado Pimento Guacamole


  • 3/4 c. Avocado From Mexico, stage 4, mashed
  • 2 T. Pimento peppers, small dice
  • 1/2 c. Cheddar cheese, shredded
  • 1/4 c. Bread & Butter Pickles, minced
  • 2 T. Lime Juice
  • 1 T. Salt
  • 1 T. Cheddar cheese, shredded, for garnish


  1. Fold together mashed avocado, hatch chilis, shredded cheddar cheese, minced B&B pickles, fresh lime juice, and kosher salt until evenly combined.
  2. Garnish with shredded cheddar cheese.
