1 Avocado From Mexico Halved pitted peeled and diced
1 large mango peeled pitted and diced
1 can ( 20 oz)Pineapple crushed drained and juice reserved,
2 tbsp pineapple juice from reserved
1/2 cup green onions scallions
1/4 cup pumpkin or sunflower seeds toasted
3 tbsp cilantro chopped
1-2 tsp jalapeño minced
In a large bowl, combine the avocado, mango, pineapple, pineapple juice, green onions, pumpkin seeds, cilantro, jalapeño and lime juice.
Serve with grilled chicken, fish or shrimp.
