Avocado Sweet Potato Toast
June 23, 2024

Who doesn’t love avocado toast? No one? Thought so! After all, it’s a quick and filling fix for any meal. But if you’re craving something new, we’ve got just the thing: sweet potato avocado toast.

You get to keep the creamy goodness of your favorite avocado topping while swapping out toasted bread for … you guessed it! Sweet potato. It’s simple and adds a touch of sweetness, as well as an extra dose of vitamins and minerals. Plus, the nutritious veggie is a great gluten-free alternative to traditional bread and makes for a killer snack or meal for anyone who follows a vegan or vegetarian lifestyle.

Sounds pretty good, right? Here’s everything you need to know to make the most delicious sweet potato avocado toast.

How to Make Sweet Potato Avocado Toast

Sweet potato avocado toast is easy to whip up in just a few steps and requires minimal ingredients, making it the perfect no-fuss meal. But if you’re new to the toast game, we’ve outlined the tips to get you started and our favorite ways to get creative (hello, toppings!).

Preparing the Sweet Potato Toast

First, you’ll want to peel a large sweet potato and cut it lengthwise into oblong, “toast”-shaped slices. If you’re a fan of a softer texture, make your sweet potato slices thicker and ensure they are cooked through. The thinner you cut them, the crispier they’ll get in the oven. Some other tricks to getting your sweet potato toast crispier include ensuing the slices are very dry and/or are dusted lightly with cornstarch before roasting.

Preheat your oven to 450°F. Brush your sweet potato slices with olive oil, salt, and pepper, and then roast (or “toast”) them on a baking sheet for about 6–8 minutes or until the surface starts browning and blistering. Flip your sweet potato slice and roast for another 6–8 minutes. Keep an eye on your sweet potato toast to avoid burning.

Top Your Toast

While the toast is baking, it’s time to whip up your favorite avocado topping. Of course, you can start with your classic guacamole by combining onion, salt, lime juice, and jalapeño with your perfectly ripe avocado, or keep it simple with just a few slices of the good stuff.

Is It Ripe?

Is your avocado not quite ripe? Don’t fret. We have a couple of suggestions to speed up the ripening process. To ensure a steady supply of ripe avocados, keep them in a brown paper bag with a banana and check them daily. They could be ready as early as overnight!

If you want to up the ante and add some protein, make your topping by mashing up an avocado with some salt and chili flakes, and then top it off with an over-easy egg. The heat from the chili pairs well with the sweetness of your toast, and the gooey yolk adds that little touch of indulgence. If you’re looking for buttery notes, pile on an over-easy or scrambled egg, chives, and hot sauce.

Variety is the spice of life! Keep things fresh by introducing a variety of textures to your sweet potato avocado toast. Top your toast with sliced radishes or cucumbers, crumbly cheese, and/or toasted chickpeas to balance out the soft and smooth sweet potato toast. For a vegan option, replace the crumbly cheese with some alfalfa sprouts and balsamic glaze for a crunchy, silky, salty, and sweet combo that delivers the most.

More Sweet Potato Avocado Toast Toppings

As with traditional avocado toast, the topping possibilities are endless. In terms of the actual avocado, you can get creative and play around with mashed or sliced avocado or even experiment with a scoop of guacamole instead. Just make sure it’s ripe! The avocado skin should be dark green to dark purple with a bumpy texture, and it should yield to gentle pressure without leaving indentations or feeling mushy.

Then, add some extra flavor with various proteins, herbs, spices, and sauces. Aside from the ones listed above, we love adding a dollop of Greek yogurt or hummus. These dips are the perfect creamy addition that provide an extra bit of protein, and the subtle savory flavors highlight the potato’s sweetness.

Remember: Herbs and spices are your friends. We love flaky sea salt, everything bagel seasoning, garlic powder, and cumin, but take a look in your spice cabinet and play around with new combinations to bring out the contrasting flavors in your sweet potato avocado toast.

Serving Suggestions

Whether you’re cooking for yourself or a group, sweet potato avocado toast always hits the spot. Serve it as a nutritional and satiating breakfast before a day of work, a midday snack before a tough workout, or for dinner topped with shredded chicken. You really can’t go wrong!

If you’re hosting a party or brunch, consider setting up a sweet potato avocado toast bar. You can pre-roast the sweet potato and put out different topping options for guests to build their own toast. Mix up a bowl of mashed avocado (be sure to add some lemon or lime juice to keep it from browning) and set up a variety of toppings, such as berries, smoked salmon, scrambled eggs, hummus, and chickpeas, so guests can customize based on their dietary restrictions.
