Place all guacachurri ingredients except the avocado into a food processor and pulse until finely minced. Spoon the mixture into a bowl and add the diced avocado. Mash with a fork, leaving it chunky. Sauté the mushrooms in oil over medium-high heat until golden brown (approximately 5 minutes). Add salt to taste. Assemble the burgers in this order: patties, mushrooms, and top with guacachurri.

 

Bacon Burger with Sweet and Savory Avocado Bacon Spread

Substitute avocado for traditional condiments in this Bacon Burger with Sweet and Savory Avocado-Bacon Spread that combines pepper, onion, and garlic flavors. Here is how to make the sweet and savory avocado bacon spread:

 

Ingredients (8 servings):

  • 4 ea. slices of thick-cut Smithfield® bacon
  • 1 tbsp. brown sugar
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1 ea. Avocado From Mexico, pitted and peeled
  • 1 tbsp. lemon juice
  • 1 tbsp. mayonnaise
  • Salt to taste
  • Pepper to taste

 

Method:

Combine the brown sugar, onion powder, and garlic powder in a small bowl. Using your hands, rub the mixture on both sides of the bacon. Then, cut each slice into 1/2-inch pieces. Fry over medium heat until crispy (10–15 minutes). Remove the bacon pieces with a slotted spoon and place on a paper towel. Mash the avocado, lemon juice, mayo, salt, and pepper in a small bowl. Avocado Corn Relish Ingredients (4 servings):

  • 1/2 c. prepared fire-roasted corn kernels

Method:

  • Chunky: Somewhere between diced and smooth, chunky avocado spread texture gives spreads intrigue. No fancy tools are needed — smash diced avocado against the side of a bowl with a fork.
