Burrata Caprese Avo-Toast

Ingredients

  • 6 cups multicolored cherry tomatoes, halved
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 6 Avocados From Mexico, pitted and peeled
  • 24 slices sourdough boule, thick-cut and toasted
  • 24 each burrata, 2 ounce rounds
  • 3 cups Citrus Basil Avocado Mousse
  • 1 1/2 cups fresh basil, chiffonade

Instructions

  1. Place cherry tomatoes in a medium bowl and mix with vinegar, olive oil, salt and pepper. (Marinated tomatoes can hold, refrigerated, for up to 24 hours.)
  2. Slice each avocado into quarters.
  3. Build each toast by assembling in the following order: Toasted sourdough, ¼ avocado, smashed and spread over toast, ¼ cup drained marinated cherry tomatoes, 1 round burrata, 2 tablespoons Citrus Basil Avocado Mousse, 1 tablespoon basil chiffonade.
  4. Serve immediately.
