Classic Avocado Dinner Recipes

Hear that? That’s our dinner bell, calling you to the table. We’ve got three options for you on tonight’s menu, each one featuring a familiar food — but with a delicious green twist. You know how we are: If there’s something good, we make it better by adding avocado.

 

These avocado dinner recipes are all classics for family dinner, a dinner party with friends, or even dinner for one. But we’ve upped the game by working avocado into each entrée, so the whole gang can dig into an elevated version of their favorite meal. 1. Avocado and Shrimp Scampi Pasta

Add some creamy green to this classic Italian-American dinner. Our shrimp scampi is packed with all the zesty, garlicky goodness of the original recipe, but we’ve elevated the lemony sauce by adding mashed avocado to create a thicker, richer, and, dare we say, delicious-er dinner. This recipe serves 4.

 

Ingredients

  • 8 c. water
  • 1 lb. cooked shrimp, deveined and peeled
  • 8 oz. linguini, uncooked
  • 1 Avocado From Mexico, mashed
  • 1/2 c. yellow onion, minced
  • 1/2 c. Parmesan cheese, shredded
  • 1/4 c. white wine
  • 1/4 c. parsley, chopped
  • 2 tbsp. avocado oil
  • 2 tbsp. butter, salted
  • 2 tbsp. lemon juice
  • 4 cloves of garlic, minced
  • 1/2 tsp. crushed red pepper
  • 1/2 tsp. paprika
  • 1/2 tsp. garlic powder
  • Salt and pepper to taste

 

Method

While the noodles boil, cook the onion in avocado oil over medium heat until translucent, then add the shrimp, white wine, butter, and spices. Cook for about 10 minutes to let the liquid reduce, making the shrimp nice and juicy. Add parsley, lemon juice, Parmesan, and the mashed Avocados From Mexico and stir together until blended. 2. Sweet Pork Chops with Grilled Pineapple-Avocado Salsa

Who doesn’t love pork chops for dinner? If such people exist, then we’ve got a dinner recipe that will change their minds. Our pork chops are marinated in pineapple juice and brown sugar and topped with a grilled avocado salsa. (Yep, we love grilling avocado. Learn how here.) This recipe serves 4.

 

Ingredients

  • 2 ea. 8-oz. cans pineapple rings, 1/2 c. juice reserved
  • 2 tbsp. brown sugar
  • 2 tbsp. soy sauce
  • 2 tbsp. fresh lime juice, divided
  • 4 bone-in, center-cut pork chops, about 3/4-inch thick
  • 1–1/2 tsp. kosher salt, divided
  • 1/2 tsp. ground pepper
  • 2 Avocados From Mexico, halved, pitted, skin removed
  • 1 small red onion, peeled, cut into 1/2-inch rings
  • 1 jalapeño pepper, halved, seeded
  • 1 c. cherry tomatoes, quartered
  • 1/4 c. cilantro, roughly chopped

 

Method

Season the pork chops with salt and pepper and then let them marinate in pineapple juice, brown sugar, soy sauce, and 1 tablespoon lime juice. Grill the avocado halves, pineapple rings, jalapeño, and onion on medium-high heat until grill marks appear. Roughly chop them and combine them with the remaining ingredients to make the salsa. Grill the pork chops for 5–6 minutes per side until cooked thoroughly. Plate them, cover ’em in salsa, and ring the dinner bell. Get the full method and recipe here.

 

3. Avocado Fajita Pizza

Pizza Ingredients

  • 1 frozen pizza crust
  • 1–1/2 c. Mexican blend cheese, shredded
  • 1/2 lb. seasoned fajita beef, uncooked and sliced
  • 1 ea. Avocados From Mexico, diced
  • 1 ea. green bell pepper, sliced
  • 1/3 c. pizza sauce
  • 1 tbsp. avocado oil

 

Avo Crema Drizzle Ingredients

  • 2 oz. cream cheese, melted
  • 1/2 Avocados From Mexico
  • 1/4 c. milk, 2%

 

Method

Saute the fajita beef, onion, and bell pepper in olive oil over medium-high heat for 10–15 minutes,  or until cooked well. Spread pizza sauce on your crust, add the sauteed mixture, and cover generously with cheese. Bake at 400 F for 20–25 minutes, until the crust is golden brown. While the pie is baking, whisk together the avocado crema ingredients until creamy and smooth. When the pizza’s done, remove from the oven and top with sliced avocado.
