Avocado Thai Tofu Tacos – Portland

We have imPortant news: These avo tofu tacos are plant-based and full of flavor. And with their peanut sauce, veggie slaw, and sesame seeds, they mimic tasty Thai cuisine!

INSTRUCTIONS

  1. For the tofu: Heat a medium-large skillet on medium heat. Heat skillet for approximately 2 minutes then add oil. Once oil is hot, add tofu. Cook approximately 15 minutes, rotating sides regularly, until all sides are browned. Remove from heat, let cool a few minutes and place in a medium bowl.
  2. For the peanut sauce: In a small, microwave-safe bowl, add peanut butter and heat in microwave until soft and runny, approximately 10 seconds. Add all ingredients and stir until well combined. After tofu is cooked, toss tofu in peanut sauce until well coated.
  3. For the slaw: In a medium bowl, add all ingredients and toss until well combined. Salt and pepper to taste.
  4. For the tacos: Assemble tacos by evenly distributing tofu onto tortillas. Evenly top with slaw and avocado slices. Sprinkle with crushed peanuts and sesame seeds.
