Avocado Mexican Taco Salad

INGREDIENTS

  • Salad
  • 16 c. Romaine lettuce
  • 1 lb. Beef, 90/10 lean, ground
  • 1 c. Black beans, canned, drained
  • 1 c. Cheese, cheddar, shredded
  • 1 c. Corn, canned, drained
  • 1 c. Tomatoes, diced
  • 1 c. Tri-colored tortilla strips
  • 1 ea. Taco seasoning packet
  • 1 T. Avocado oil
  • To garnish Salsa
  • To garnish Sour cream
  • Guacamole
  • 2 ea. Avocados From Mexico
  • 1 t. Lemon juice
  • To taste Salt

INSTRUCTIONS

  1. In a large skillet, warm avocado oil and add ground beef. Brown beef until thoroughly cooked (approximately 10 minutes), until there is no pink. Stir in taco seasoning until well combined.
  2. In a small bowl, mash avocados and stir in lemon juice. Salt to taste.
  3. In four medium bowls, evenly divide the salad mixture. Evenly distribute the beans, cheese, corn, tomatoes and tortilla strips into sections lining the bowls.
  4. Evenly divide guacamole and place in center of salads. Garnish with salsa and sour cream.
