Avocado Lobster Salad

When you’re craving avocados, this recipe’s got you. It’s made with fresh Avocados From Mexico, so you know it’s gonna be goooood. Oh, and don’t forget to bookmark this recipe, because once you try it, you’ll be back for more.

INGREDIENTS

  • 8 ea. Lobster tails, cooked, chopped
  • 4 ea. Butter head lettuce leaves
  • 2 ea. Avocados From Mexico, cubed
  • 1/4 c. Avocado oil mayonnaise
  • 1/4 c. Celery, small diced
  • 1/4 c. Chives, finely chopped
  • 3 T. Lemon juice
  • Salt and pepper, to taste

INSTRUCTIONS

  1. In a medium bowl, mayonnaise, celery, chives and lemon juice. Stir until well combined. Salt and pepper to taste.
  2. Fold in lobster and avocado, gently stir until well combined.
  3. On a serving plate, place lettuce leaves and top with lobster mixture.
