Ingredients
- Mediterranean Avo Toast
- 4 EA Sourdough toast slice, 1/2" thick
- 2 c Avocado Hummus Guacamole
- 2 EA Avocados From Mexico, split, pitted, peeled
- 1/2 c Kalamata olives, halved
- 1/2 c English cucumber, thinly sliced
- 1/2 c Feta cheese, crumbled
- 1/4 c Red onion, thinly sliced
- 3 Tbsp Olive oil
- 4 tsp Flat-leaf parsley, fresh, chopped
- 1/2 Tsp Kosher salt
- 1/2 c Fried Chickpeas
- 4 EA Lemon wedge, grilled
- Avocado Hummus Guacamole
- 3/4 c Chickpeas, canned, drained
- 2 Tbsp Tahini paste
- 5 tsp Lemon juice
- 2 tsp Garlic, chopped
- 1 Tbsp Olive oil
- 1 1/2 c Avocados From Mexico, mashed
- 2 Tbsp Flat-leaf parsley, fresh
- 1/8 tsp Cayenne pepper
- 1/8 tsp Smoked paprika, ground
- Fried Chickpeas
- 3 c Vegetable oil
- 8 oz Chickpeas, canned, drained
- 1/4 tsp Kosher salt
- 1/8 tsp Black pepper, ground
Instructions
- Fried Chickpeas:
- In a sturdy medium pot over medium heat, begin heating vegetable oil to 375°F.
- Place chickpeas under running water to rinse.
- Once rinsed, place into colander to allow draining.
- Once drained, remove from colander and gently place small batch of chickpeas into hot oil. Fry until golden brown, approximately 2 to 3 minutes.
- Using a slotted spoon, remove chickpeas from oil and let them drain on a paper towel.
- Season immediately with salt and pepper. Continue process until all chickpeas are cooked.
- Allow Fried Chickpeas to cool completely before transferring to a dry container.
- Avocado Hummus Guacamole:
- Place all ingredients into a food processor, processing until a smooth consistency has been reached.
- Once processed, transfer hummus to a clean container. Place plastic wrap on top of hummus and press down firmly to prevent oxidation. Place lid on top of plastic wrap to seal. Refrigerate until needed for up to 24 hours.
- Mediterranean Avocado Toast:
- Place 1 slice of toasted sourdough bread onto work surface.
- Slice 1 pitted and peeled avocado half into ⅛″ slices; fan across Avocado Hummus Guacamole.
- Top sliced avocado with 2 tablespoons each of olives, cucumber and feta, along with 1 tablespoon sliced red onion.
- Drizzle entire toast with 2 teaspoons olive oil.
- Garnish with 1 teaspoon parsley, ⅛ teaspoon salt and 2 tablespoons fried chickpeas.
- Place onto a plate and serve with grilled lemon wedge.
