3 1/2 cups Avocados From Mexico, peeled and pitted, small diced
2 cups white balsamic vinegar
5 tablespoons dill, fresh
1 cup granulated sugar
1/4 cup kosher salt
2 cups ice
2 1/2 cups English cucumber, small diced
2 cups white balsamic vinegar
Instructions
Heat balsamic, dill, sugar, and salt together until sugar and salt are totally dissolved. Take the pickling liquid off the heat and add ice to mixture. Let it melt completely.
Pour cooled pickling liquid over small diced avocado and English cucumber.
Let the mixture sit for 1-2 hours before using.
