Avocado Harissa Hollandaise



  • 4 each Avocados from Mexico, peeled, pitted
  • 4 cups water, hot
  • 3/4 cup lemon juice
  • 2 teaspoons salt
  • 3/4 cup Harissa
  • 1 cup clarified butter, melted


  1. In a food processor or blender, add avocado, water, lemon juice, salt and pepper and Harissa. Secure lid and blend until smooth.
  2. Slowly add butter into the mixture while blending, continue to blend until completely combined.
