Summer Avocado and Melon Club

Toasted 9-grain wheat bread spread with fresh mashed avocado folded with fresh grapefruit, lime juice, and jalapeños topped with feta cheese, salted cucumber, watermelon, and a drizzle of citrus aioli.

INGREDIENTS

  • 2 pc. 9-grain whole wheat bread
  • 0.5 c. Paloma Guacamole
  • 2 Tbsp. Feta cheese, crumbled
  • 6 Slices Salted cucumber, sliced 1/8"
  • 4 oz. Watermelon, sliced 1/8"
  • 2 Tbsp. Citrus aioli, prepared
  • 1 tsp. Tajin
  • Paloma Guacamole:
  • 2 c. Avocados From Mexico, stage 3, mashed
  • 1 Tbsp. Grapefruit, Ruby Red, supremes
  • 4 Tbsp. Lime juice
  • 3 Tbsp. Jalapeño, grilled and sliced
  • 1 Tbsp. Kosher salt

INSTRUCTIONS

For the sandwich:
  1. Toast bread.
  2. Spread Paloma Guacamole, top with feta cheese, salted cucumber, watermelon slab, Tajin and citrus aioli.
For the guacamole:
  1. In a medium bowl, fold together the mashed avocado, diced grapefruit Supremes, lime juice, cilantro, jalapeños, and kosher salt until all ingredients are evenly combined.
