- 1 1/4 c. Avocado Corn Relish (See Below)
- 3/4 c. Citrus Avocado Aioli (See Below)
- Shrimp Burgers
- 1 1/4 lb. Shrimp, Raw, Peeled, Deveined
- 1 c. Panko Breadcrumbs
- 1 ea. Egg, Whole
- 2 T. Stone Ground Mustard
- 1 T. Garlic, Minced
- 4 t. Basil, Dried
- 4 t. Smoked Paprika
- 4 t. Onion Powder
- 2 t. Kosher Salt
- 2 t. Black Pepper, Ground
- 1/2 c. Sour Cream
- 1/4 c. Hot Sauce
- 4 t. Lime Juice, Fresh
- 4 t. Olive Oil
- Charred Corn & Avocado Relish
- 1/2 c. Fire-Roasted Corn Kernels, Canned
- 1/4 c. Jalapeños, Seeded, Minced
- 1/2 c. Avocados From Mexico, Stage 3, 1/4" Dice
- 1/4 c. Red Onion, 1/4" Dice
- 1/4 c. Cherry Tomatoes, Quartered
- 2 T. Lime Juice Fresh
- 2 T. Olive Oil
- 1 t. Kosher Salt
- Citrus Avocado Aioli
- 1/4 c. Mayonnaise
- 1/2 c. Avocados From Mexico, Stage 4, Pureed
- 2 T. Lemon Juice, Fresh
- 4 t. Honey
- 1/2 t. Kosher Salt
- 1/2 t. Black Pepper, Ground
Instructions
- Spicy Shrimp Burger With Relish & Citrus Avocado Aioli Directions:
- Build each burger in the following order and amounts:
- 1 Each Burger Bun Bottom, Toasted
- 1 Each Shrimp Burger, Cooked
- 3 Tbsp Charred Corn and Avocado Relish
- 2 Tbsp Citrus Avocado Aioli, Drizzled
- 1 Each Burger Bun Top, Toasted
- Shrimp Burger Directions:
- Prepare the burgers: Preheat oven to 400°F. In a food processor, chop the shrimp into a fine paste.
- Add breadcrumbs, egg, mustard, garlic, basil, paprika, onion powder, salt, and pepper until combined. Add sour cream, hot sauce, and lime juice and puree again until just combined.
- Form into six 4-oz patties. Heat olive oil in a large, cast-iron skillet over medium-high heat. Sauté burger patties until golden brown on each side, blotting gently with a paper towel to remove excess grease.
- Transfer to a parchment-lined baking sheet and bake in oven for 10 minutes or until an internal temperature of 165°F is reached.
- Use immediately.
- Charred Corn & Avocado Relish Directions:
- In a medium bowl, add all ingredients, and mix until well combined. Set aside in an airtight container in the fridge until ready to use.
- Citrus Avocado Aioli Directions:
- Whisk all ingredients together until they are all evenly combined. Hold in an airtight container in the fridge until ready to use.
