Smoky Avocado and Chipotle Sliders

Ingredients

  • 3 EA Hawaiian slider bun, toasted, bottom
  • 1 1/2 oz Smoky Avocado Chipotle Mayo Sauce
  • 1 1/2 oz Green lettuce, shredded
  • 3 EA Beefsteak tomatoe, sliced thin
  • 3 oz Pickled red onion
  • 3 EA Beef burger, 2.5oz, seasoned, grilled
  • 3 EA Pepper jack cheese, sliced small
  • 6 EA Avocados From Mexico, sliced, tossed in oil and cilantro
  • 3 oz Smoky Avocado Chipotle Mayo Sauce
  • 3 EA Hawaiian slider bun, toasted, top
  • Pickled Red Onions
  • 3/4 c Red wine vinegar
  • 1 Tbsp White granulated sugar
  • 1 tsp Kosher salt
  • 1/4 c Water, warm
  • 1 EA Red onions, large, sliced thin
  • Cilantro and Oil Marinated Avocados
  • 1 EA Avocados From Mexico, fresh, sliced
  • 2 Tbsp Avocado oil, prepared
  • 1 Tbsp Cilantro, fresh, chopped
  • 1/4 tsp. Kosher salt
  • Avocado Chipotle Mayo
  • 1 EA Avocados From Mexico, fresh, mashed, stage 4
  • 8 oz Lime mayonesa, heavy, prepared
  • 2.5 oz Lime juice, fresh
  • 1/2 oz honey, prepared
  • 4 EA Adobo Chipotle peppers, prepared
  • 1 tsp Garlic, fresh, minced
  • 1/4 tsp Kosher salt
  • 2 Tbsp Sweet relish, prepared

Instructions

    Avocado Chipotle Mayo
  1. Place all ingredients into a blender and blend until well combined.
  2. Remove sauce from blender and place sauce into a clean container. Fold in sweet pickle relish.
  3. Place plastic wrap on top of sauce, pressing down firmly to remove any air bubble and prevent oxidization.
  4. Cover, label and date, and store as per HACCP. Serve as needed.
    Cilantro and Oil Marinated Avocados
  1. Remove stem and cut avocado in half from top to bottom.
  2. Twist one half of the avocado to pull two halves apart.
  3. Remove the pit and scoop out the pulp from avocado.
  4. Place both halves onto a cutting board and slice the avocado widthwise into 20 equal slices.
  5. Place the slices into a mixing bowl. Add avocado oil, cilantro, and salt. Gently toss to combine.
  6. Place the dressed slices into a clean container.
  7. Place plastic wrap on top of the avocados and press down gently to prevent oxidization. Refrigerate until needed for up to 6 hours. Serve as needed.
    Pickled Red Onions
  1. In a mixing bowl, combine red wine vinegar, sugar, salt, and warm water. Stir to dissolve the sugar and salt.
  2. Add the sliced red onions to pickling mixture. Make sure that the onions are immersed in the liquid.
  3. Let onions set for approx. 1 hour. After an hour, cover and store in the fridge for up to 5 days. Serve as needed.
    Smoky Avocado and Chipotle Sliders
  1. Place 3 bottom toasted buns onto a clean work surface.
  2. Drizzle with smoky avocado chipotle mayo.
  3. Top with lettuce, tomato, and pickled onions.
  4. Place all beef burger on top of vegetables. Place cheese on top of all beef burger. Place fresh sliced avocado on top of cheese.
  5. Drizzle with more smoky avocado chipotle mayo.
  6. Place top toasted buns onto burger to close. Serve as needed with sauce on the side.
