- 1 1/2 c. Banh Mi Guacamole (See Below)
- 18 strips Spicy Honey Roasted Bacon (See Below)
- 6 ea. Eggs, Hard Boiled, 0.25" Slice
- 3 c. Cabbage Slaw (See Below)
- Banh Mi Guacamole
- 1 1/2 c. Avocados From Mexico, Stage 4, Mashed
- 2 T. Seasoned Rice Wine Vinegar
- 1 T. Scallions, Sliced
- 1 T. Cilantro, Roughly Chopped
- 1 t. Sesame Oil
- 1 t. Sesame Seeds, Toasted
- 1 t. Kosher salt
- Spicy Honey Roasted Bacon
- 18 ea. Bacon, Thick-Cut
- 1/3 c. Honey
- 1/4 c. Sesame Seeds
- 1 t. Cayenne Pepper
- 2 t. Coriander, Ground
- Cabbage Slaw
- 1 1/2 c. Napa Cabbage, Shredded
- 1 1/2 c. Purple Cabbage, Shredded
- 3/4 c. Carrots, Shredded
- 1/2 c. Cilantro, Roughly Chopped
- 1/4 c. Scallions, Sliced
- 1 T. Jalapeño, Seeded, Minced
- 1 t. Garlic, Fresh, Minced
- 3 T. Lime Juice
- 1 1/2 T Sesame Seeds, Toasted
- 1 1/2 t. Seasoned Rice Wine Vinegar
- 1 1/2 t. Honey
- 1 1/2 t. Sesame Oil
- 1 t. Kosher Salt
Instructions
- Loaded Breakfast Bahn Mi With Toasted Sesame Guac Directions:
- Build each Loaded Breakfast Banh Mi in the following order and amounts:
- 1 Each baguette, Split, Toasted
- 0.25 Cup Banh Mi Guacamole
- 3 Strips Spicy Honey Roasted Bacon
- 1 Each Egg, Hard Boiled, 0.25" Slice
- 0.5 Cup Cabbage Slaw
- Banh Mi Guacamole Directions:
- In a medium bowl, fold together fresh mashed avocado, rice wine vinegar, sliced scallions, chopped cilantro, sesame oil, toasted sesame seeds, and kosher salt until all ingredients are evenly combined.
- Transfer to container and press plastic wrap to the surface of the guacamole. Hold in the refrigerator until ready for use.
- Spicy Honey Roasted Bacon Directions:
- Prepare the bacon: Line 1 to 2 rimmed baking sheets with parchment paper and preheat oven to 350°F. Lay bacon strips on prepared baking sheet. In a small saucepan, combine honey, coriander, and cayenne and heat over medium heat until just melted. Use a pastry brush to spread honey mixture over bacon.
- Roast bacon for 8 minutes, then sprinkle sesame seeds over bacon. Roast an additional 5 to 7 minutes until crisp. Transfer bacon to a cooling rack and set aside. (Times may vary depending on fattiness of bacon.)
- Cabbage Slaw Directions:
- Prepare the slaw: In a large bowl, combine Napa cabbage, purple cabbage, carrots, and cilantro.
- In a separate small bowl, whisk together lime juice, rice vinegar, honey, sesame oil, garlic, and sesame seeds.
- Pour over vegetables and toss until well combined. Transfer the slaw into an airtight container and hold in the refrigerator until ready to use.
