Avo Crunch Chicken Salad Sandwich

A juicy hand-shredded chicken salad folded with fresh mashed avocado, fresh lemon juice, dried cranberries, crumbled feta cheese and toasted pumpkin seeds is then topped with lemon and oil dressed spring greens on a buttery croissant.


  • 1 ea. Croissant
  • 1 c. Avocado Chicken Salad
  • 0.5 c. Lemon oil spring green salad
  • Avocado Chicken Salad:
  • 3 ea. Avocados From Mexico, stage 4
  • 1 Tbsp. Lemon juice
  • 0.25 c. Dried cranberries
  • 0.25 c. Feta cheese, crumbled
  • 3 Tbsp. Pumpkin seeds, toasted
  • 8 oz. Chicken, cooked and shredded
  • 1 tsp. Kosher salt
  • 1 ea. Avocados From Mexico, stage 3


For the sandwich:
  1. Split croissant.
  2. Fill with chicken salad and top with greens.
  3. For the salad:
  4. Mash Avocado.
  5. Fold all ingredients together.
