The Avocado Wedge Salad

INGREDIENTS

  • 2 EA Avocados From Mexico, sliced
  • 2 c Cherub tomatoes, halved
  • 2 EA Head of iceberg lettuce, cut into 4 wedges
  • 4 oz Blue cheese, crumbled
  • 4 T Sundried tomato bits
  • Avocado Ranch Dressing
  • 2 EA Avocados From Mexico, diced
  • 1/2 c Greek yogurt, plain, nonfat
  • 2 T Lime juice
  • 2 EA Garlic clove
  • 2 T Chives, chopped
  • To taste Salt and pepper

INSTRUCTIONS

  1. For the Avocado Ranch Dressing, place all ingredients in a blender and puree until smooth.
  2. Place lettuce wedges on a large serving platter and top with fresh cherub tomatoes.
  3. Drizzle Avocado Ranch Dressing and crumbled blue cheese over salad.
  4. Top with avocado slices and sundried tomato bits. Serve as needed.
