Ingredients
- 4 EA Burrito tortillas
- 2 c Chicken, shredded, prepared
- 1/2 c Green Chile sauce, hot/mild, canned
- 1 tsp Cumin spice, ground
- 2 EA Avocados From Mexico, fresh, sliced, small
- 1 EA Pinto beans, drained, prepared, 15 oz can
- 2 c Monterey jack cheese, shredded
- 4 Tbsp Vegetable oil, divided
- 8 oz Avocado Lime Crema
- 16 oz Traditional Guacamole
- Traditional Guacamole
- 4 EA Avoados From Mexico, whole, fresh
- 2 Tbsp Lime juice
- 1/2 tsp Kosher salt
- 2 Tbsp White onion, chopped fine
- 1 1/2 Tbsp Jalapeño peppers, no seeds, chopped fine
- 2 Tbsp Cilantro, chopped fine
- Avocado Lime Crema
- 1 EA Avocados From Mexico, fresh
- 1 c Mexican crema, prepared
- 1/4 c Cilantro, fresh
- 2 Tbsp Lime juice
- 1/2 tsp Kosher salt
Instructions
- Avocado Lime Crema
- Place all ingredients into a food processor and process until smooth.
- Place sauce into a clean container. Place plastic wrap on top of sauce and press down firmly. Cover with lid and store as per HACCP. Serve as needed.
- Traditional Guacamole
- Remove stem and cut avocado in half from top to bottom.
- Twist one half of the avocado to pull two halves apart.
- Remove pit and scoop the pulp from the avocado into a large bowl.
- Gently mash avocado with lime juice and salt.
- Gently fold in onions, jalapeño peppers, and cilantro, then transfer to a clean serving dish.
- Garnish guacamole with cilantro or favorite topping. Serve as needed.
- Green Chili Chicken Quesadillas
- In a medium bowl, combine chicken, chili sauce, and cumin.
- Lay tortillas on a work surface and divide avocado, beans, chicken, and cheese between tortillas.
- Place all ingredients on 1/2 of each tortilla and fold bare 1/2 of each tortilla over to cover fillings.
- In a large nonstick skillet, heat 1 tbsp. of vegetable oil over medium heat. Place 1 quesadilla in skillet and cook.
- Flip once until golden brown on both siders, 2-3 minutes per side. Repeat with remaining vegetable oil and quesadillas.
- Cut quesadillas into wedges and serve warm with avocado crema and guacamole.
