2 1/4 c. Avocados From Mexico, stage 4, peeled, pitted, and mashed
2 T. lemon juice, fresh
1/4 c. parsley, fresh, chopped
1/2 c. garlic, fresh, roasted whole, chopped
2 T. red onion, charred, chopped
2 t. black pepper, cracked
1 1/3 t. steak seasoning, Montreal Grill Flavor
1/4 c. fire roasted red bell pepper, canned, drained, and chopped
3 c. plantain chips, prepared
1 1/2 c. ribeye steak, grilled, small diced
6 ea. lemon wedges, grilled, as a garnish
2 T. capers, deep fried, as a garnish
1 1/2 t. steak seasoning, Montreal Grill Flavor, as a garnish
In a mixing bowl, mix mashed avocados with lemon juice, parsley, garlic, red onion, black pepper, roasted red pepper and 2 ½ TB steak seasoning. Fold until well combined.
Cover with plastic wrap, pressing plastic wrap on avocado mixture to eliminate air. Hold chilled until use.
Build each serving in the following order and quantity: ½ cup plantain chips, ½ cup guacamole, 1 tsp fried capers, ¼ cup diced steak, Sprinkle of steak seasoning and Garnish with grilled lemon wedge
