Rocky Mountain High Guac

Ingredients

  • 2 1/4 c. Avocados From Mexico, stage 4, peeled, pitted, and smashed
  • 2/3 c. ham, fully cooked, diced
  • 5 T. bell peppers, red & yellow, small diced, sautéed
  • 1 T. red onion, small diced
  • 1 1/3 t. salt, kosher
  • 1 T. lime juice, fresh
  • 3 T. queso sauce, warmed
  • 6 ea. large egg, fried
  • 6 c. tater tot crowns, deep fried
  • 1/2 T. parsley, fresh, chopped

Instructions

  1. In a mixing bowl, mix smashed avocados, ham, sautéed bell peppers, red onion, salt and lime until well combined.
  2. Cover with plastic wrap, pressing plastic wrap on avocado mixture to eliminate air. Hold chilled until use.
  3. Build each serving in the following order and quantity: 1 cup fried tater tots, ½ TB warmed queso sauce, ½ cup guacamole, 1 fried egg round and Garnish with sprinkle of chopped parsley
