Paloma Guacamole


  • 1 1/2 q. Avocados From Mexico, stage 4, mashed
  • 1 1/2 c. ruby red grapefruit, supreme
  • 6 T. lime, juiced
  • 2 T. cilantro, chopped
  • 6 T. jalapeños, grilled and sliced
  • 3/4 c. tequila chili lime hot sauce, sub-recipe
  • 6 t. Tajin seasoning
  • 3 t. salt
  • 36 ea. corn tortilla chips, fried
  • Tequila Chili Lime Hot Sauce
  • 1/2 c. Avocados From Mexico, stage 4, puréed
  • 1/4 c. chili lime sauce, prepared
  • 3 T. tequila, Reosada


  1. Combine avocados, 1.25 grapefruit, lime juice, cilantro, jalapeño, and salt until thoroughly combined.
  2. Serve the mixture in 6 shot glasses evenly distributed. Garnish with 1 sliced jalapeño and 1 slice of grapefruit and dust with Tajin seasoning. Finish with tortilla strip and serve with side of tequila lime hot sauce.
  3. Tequila Chili Lime Hot Sauce: Whisk all ingredients together until thoroughly combined.
