Deviled Egg Guacamole


  • 2 ea. Avocados From Mexico, whole, fresh
  • 1/4 c. Heavy mayonnaise
  • 1 Tbsp. Lime juice
  • 1/4 tsp. Kosher salt
  • 2 Tbsp. Red onion, chopped fine
  • 1 Tbsp. Jalapeño, with seeds, chopped fine
  • 1/4 c. Hardboiled egg, diced rough
  • 2 Tbsp. Cilantro, chopped fine
  • 1 Tbsp. Hardboiled egg, diced rough (garnish)
  • 1/4 tsp. Paprika, smoked (garnish)


  1. Remove stem from avocado. Cut avocado in half from top to bottom. Twist one half of the avocado to pull two halves apart. Remove pit from avocado. Scoop out the pulp from the avocado and place into a large bowl.
  2. In a large bowl, gently mash the avocados with mayo, lime juice, and salt.
  3. Gently fold in onions, jalapeños, eggs, and cilantro.
  4. Transfer guacamole to a clean serving dish. Garnish with diced hardboiled egg and smoked paprika. Serve as needed.
