Ingredients
- Billionaire's Bacon Guacamole
- 2 ea. Avocados from Mexico, whole
- 1 Tbsp. Lime juice
- 1/4 tsp. Kosher salt
- 2 Tbsp. White onion, finely chopped
- 1 Tbsp. Jalapeño, seeds removed, finely chopped
- 1/4 c. + 2 Tbsp. Billionaire's Bacon, medium chopped
- 2 tsp. Cilantro, finely chopped
- 1/4 tsp. Black pepper, ground
- 1 tsp. Parsley, fresh, roughly chopped
- Billionaire's Bacon
- 8 oz. Light brown sugar,
- 1 tsp. Red pepper flakes
- 3/4 tsp. Smoked paprika, ground
- 1 tsp. Black pepper, ground
- 16 oz. Bacon, smoked, thick-cut
Instructions
- For the Billionaire's Bacon:
- Preheat the oven to 350°F.
- Tightly wrap a rimmed baking sheet with aluminum foil. Place wire cooling rap on top of foil-wrapped sheet tray.
- In a mixing bowl, combine brown sugar, red pepper and paprika and black pepper with whisk until well-blended.
- Dip each slice of bacon in sugar mixture, pressing to coat. Gently shake off excess sugar.
- Lay bacon on wire rack and bake 20 to 30 minutes until crisp. Reserve.
- For the Guac:
- Remove stem from each avocado. Cut avocados in half from top to bottom. Twist one half of avocado to pull two halves apart. Remove pit from avocados.
- Scoop out pulp from avocados and place into a large bowl. Gently mash avocados with lime juice and salt.
- Gently fold in onion, jalapeño, ¼ cup chopped Billionaire’s Bacon and cilantro.
- Transfer guacamole to a clean serving dish.
- Garnish with additional 2 tablespoons chopped Billionaire’s Bacon, black pepper and parsley.
