Popping Guac

Ingredients

  • Final Build
  • 1/2 c. avocado mash, sub-recipe
  • 1 T. cilantro popping salt, sub-recipe
  • 1 T. garlic & onion popping salt, sub-recipe
  • 1 1/2 t. tomato popping salt, sub-recipe
  • Avocado Mash
  • 1/2 c. Avocados From Mexico, mashed
  • 2 1/4 t. lime juice, fresh
  • 1/4 t. salt, kosher
  • Cilantro Popping Salt
  • 1 1/2 t. popping candy, unflavored
  • 1/8 t. vegetable oil
  • 1 1/2 t. cilantro, dry
  • 1/4 t. salt, kosher
  • 1/16 t. cayenne
  • Garlic & Onion Popping Salt
  • 1 T. popping candy, unflavored
  • 1/8 t. vegetable oil
  • 1/8 t. onion powder
  • 1/8 t. garlic salt
  • 1/16 t. black pepper, finely ground
  • 1/64 t. salt, kosher
  • Tomato Popping Salt
  • 3/4 t. popping candy, unflavored
  • 1/32 t. vegetable oil
  • 3/4 t. tomato powder
  • 1/4 t. salt, kosher

Instructions

  1. Final Build: In amuse bouche spoons, build each serving in the following order and amount: avocado mash, leveled in the amuse bouche spoon, ½ tsp Cilantro Popping Salt, ½ tsp Garlic & Onion Popping Salt and ⅛ tsp Tomato Popping Salt
  2. Avocado Mash: Fold all ingredients together until fully integrated. Cover with plastic wrap, pressing plastic wrap on avocado mixture to eliminate air. Hold chilled until use.
  3. Cilantro Popping Salt: In a dry mixing bowl, toss popping candy and vegetable oil together until pieces are thoroughly coated. Add cilantro, salt, and cayenne to bowl. Mix until well-combined. Transfer cilantro popping salt mixture to an airtight container. Reserve in cool dry place until ready to use.
  4. Garlic & Onion Popping Salt: In a dry mixing bowl, toss popping candy and vegetable oil together until pieces are thoroughly coated. Add onion powder, garlic salt, ground black pepper, and salt. Mix until well-combined. Transfer garlic & onion popping salt mixture to an airtight container. Reserve in cool dry place until ready to use.
  5. Tomato Popping Salt: In a dry mixing bowl, toss popping candy and vegetable oil together until pieces are thoroughly coated. Add tomato powder and salt. Mix until well-combined. Transfer tomato popping salt mixture to an airtight container. Reserve in cool dry place until ready to use.
