Ingredients
- 1 Half Avocados From Mexico cut into quarters
- 1 tablespoon campari tomatoes diced
- 1 slice bacon
- 2 tablespoons roquefort crumbled
- 1 tablespoon scallions sliced on a bias
- 1 teaspoon balsamic vinegar
Instructions
- Place avocado quarters, cut side down on a hot grill, and grill cross hatch marks into both cut sides of each avocado quarter.
- Place avocado wedges, grilled side up, on a serving plate. Top with tomatoes, bacon, Roquefort, and scallions, then drizzle balsamic vinegar over all. Serve immediately.
