Ingredients
- Avocado Khachapuri
- 3 3/4 c. All-Purpose Flour
- 2 1/4 t. Kosher Salt
- 1/4 c. Avocado From Mexico, Stage 4, Mashed
- 1 ea. Whole Egg
- 3 t. Olive Oil
- 3/4 c. Sparkling Water, Cold
- 2 T. Butter, Unsalted, Melted
- 3 c. Avocado Cheese Filling (See Below)
- 3/4 c. Mozzarella Cheese, Shredded
- 6 ea. Egg Yolks
- 1 1/2 c. Avocados From Mexico, Stage 2, 1/2" Dice
- Avocado Cheese Filling
- 8 oz. Cream Cheese, Softened
- 1 c. Avocados From Mexico, Stage 4, Mashed
- 3/4 c. Frozen Spinach, Thawed, Drained
- 3/4 c. Feta Cheese, Crumbled
- 1/4 c. Hazelnuts, Roasted, Chopped
- 2 t. Garlic, Fresh, Minced
- 2 t. Cilantro, Fresh, Rough Chopped
- 1 1/2 t. Kosher Salt
- 1 t. Black Pepper, Fresh Ground
- 1/2 t. Ground Coriander
- 1/2 t. Cayenne Pepper
- 1/2 t. Ground Fenugreek
- 1 T. Butter, Unsalted, Melted
Instructions
- Avocado Khachapuri Directions:
- Preheat oven to 350°F.
- In a stand mixer, add flour, salt, avocado, egg, oil, and sparkling water. Mix on low using a paddle attachment until dough comes together and forms a ball.
- Remove from bowl and knead on a lightly floured surface for 1 to 2 minutes.
- Divide into six 5-oz pieces, cover in plastic wrap, and refrigerate for 1 hour.
- Roll each piece of dough into a 4"x7", 1/4-inch-thick rectangle. Brush each rectangle with 1 tsp of butter, then spoon 1/2 cup of the Avocado Cheese filling onto the center of each rectangle.
- Fold the longer sides of the dough toward the center, leaving some filling exposed. Pinch and twist the ends to form a "boat".
- Place the khachapuri on a lined baking sheet and bake for 25 minutes.
- Remove from oven. Make an indentation in the center of the exposed filling of each khachapuri and place 1 egg yolk. Sprinkle with 2 tbsp of mozzarella cheese and return to the oven to bake for 10 to 12 minutes until yolk is cooked to desired doneness and the bread is golden brown.
- Serve topped with avocados.
- Avocado Cheese Filling Directions:
- In a large bowl, add all ingredients and mix until well combined.
- Use immediately or refrigerate in an airtight container until ready to use.
