Mediterranean Avocado Breakfast Pocket

A warm pita pocket stuffed with creamy tahini guacamole, fluffy scrambled eggs, a tangy tomato, cucumber, and avocado salad, and crumbled feta cheese then finished with a drizzle of olive oil.

INGREDIENTS

  • 1 ea. Pita
  • 0.75 c. Tahini Guacamole
  • 0.33 c. Eggs, scrambled
  • 2 Tbsp. Cucumber, tomato, avocado salad
  • 1 tsp. Feta cheese
  • Tahini Guacamole:
  • 1.25 c. Avocados From Mexico
  • 0.25 c. Tahini, prepared
  • 1 Tbsp. Za'atar Seasoning
  • 2 Tbsp. Lemon juice
  • 1 tsp. Kosher salt

INSTRUCTIONS

For the breakfast pockets:
  1. Warm Pita, cut in half and open up into 2 pockets.
  2. Fill with guacamole, eggs, avo salad, and feta.
For the guacamole:
  1. In a medium bowl, fold all the ingredients together until they are evenly combined.
