Ingredients
- Everything Avocado & Salmon Bagel
- 6 ea. Everything Bagels, Toasted
- 1 1/2 c. Forager's Guacamole (See Below)
- 12 oz. Kippered Salmon, Prepared
- 6 T. Hard Boiled Egg, Rough Chopped
- 6 T. Red Onion, Minced
- 2 T. Fresh Dill, Plucked
- 6 T. Radish, Shaved
- 6 T. Capers, Fried
- Forager's Guacamole
- 1 1/4 c. Avocados From Mexico, Stage 4, Mashed
- 1/4 c. Red Onion, Minced
- 2 T. Lemon Juice, Fresh
- 1 T. Capers, Chopped
- 2 T. Fresh Dill, Minced
- 1 t. Juniper berries, Ground
- 1 t. Kosher salt
Instructions
- Everything Avocado & Salmon Bagel Directions:
- Split bagel and toast the open face until golden brown.
- Build each bagel according to the following:
- 1 Each Toasted Bagel
- 0.5 Cup Forager’s Guacamole
- 1 Oz. Kippered Salmon
- 1 Tbsp Chopped Hard Boiled Egg
- 1 Tbsp Minced Red Onion
- 1 Tbsp Dill
- 1 Tbsp Sliced Radish
- 1 Tbsp Fried Capers
- Forager's Guacamole Directions:
- In a medium bowl, fold together fresh mashed avocado, minced red onion, lemon juice, chopped capers, minced dill, ground juniper and kosher salt until all ingredients are evenly combined.
- Transfer to container and press plastic wrap to the surface of the guacamole. Hold in the refrigerator until ready for use.
