Chicken Taquito Bowl

Ingredients

  • 3 oz Green lettuce, shredded, prepared
  • 5 EA Chicken taquito, prepared, fried
  • 2 oz Cheddar cheese blend, shredded
  • 2 oz Pico de Gallo Salsa
  • 1.5 oz Avocado Buttermilk Lime Crema
  • 1/2 oz Hot sauce, prepared
  • 2 oz Traditional Guacamole
  • Guacamole with Pico de Gallo
  • 2 EA Avocados From Mexico, whole, fresh
  • 1 Tbsp Lime juice
  • 1/4 tsp Kosher salt
  • 1/4 c Pico de Gallo Salsa, fresh
  • Pico de Gallo
  • 5 oz Roma tomatoes, diced small
  • 3 oz Yellow onion, diced small
  • 1 oz Jalapeño peppers, minced
  • 1 Tbsp Lime juice
  • 1/4 tsp Kosher salt
  • 2 Tbsp Cilantro, fresh, chopped fine
  • Avocado Buttermilk Lime Crema
  • 4 oz Avocados From Mexico, fresh, diced large
  • 6 oz Sour cream, prepared
  • 2 oz Buttermilk, prepared
  • 1 1/2 oz Lime juice
  • 1/4 tsp Kosher salt

Instructions

    Avocado Buttermilk Lime Crema
  1. Place all ingredients into a food processor. Process until a smooth consistency has been reached.
  2. Place sauce into a clean container. Place plastic wrap on top of sauce and press down firmly. Then, cover with lid and store as per HACCP. Serve as needed.
    Pico de Gallo
  1. Place all ingredients into a mixing bowl. Gently toss ingredients together until evenly coated.
  2. Place in container with lid and refrigerate until needed for up to 24 hours.
    Guacamole with Pico de Gallo
  1. Remove stem and cut avocado in half from top to bottom.
  2. Twist one half of the avocado to pull two halves apart. Remove pit and scoop out the pulp into a large bowl.
  3. Gently mash the avocados with lime juice and salt, then transfer guacamole to a mixing bowl.
  4. Place the prepared pico de gallo into the guacamole and gently fold together. Serve as needed.
    Chicken Taquito Bowl
  1. Place lettuce into a serving bowl with taquitos on top of lettuce.
  2. While hot, sprinkle with cheddar cheese. Garnish with pico de gallo.
  3. Drizzle both avocado crema and hot sauce over the entire bowl.
  4. Place a scoop of fresh guacamole onto the center of the dish. Serve as needed.
